It’s that time of year again. The daylight disappears, quicker than a HiFi bar at a Slimming World meeting and the dark nights seem to drag on forever. Lack of Vitamin D leads to reclusive behaviour–Hibernating ourselves in duvet dens, armed with tubs of Ben and Jerrys and a Netflix subscription.

By time spring comes back around, we can safely expect a large amount of weight gain.

That’s why It’s so important to try and maintain some healthy habits. Don’t let the “Autumn” blues get you down.

Roasted Carrots

Not just an Autumn food, however throughout summer  Carrots are more likely to be seen in a crunchy summer salad than roasted in the oven. Although carb content can be high, so you shouldn’t eat tonnes, Roasted carrots are a brilliant healthy snack. They are easy to make, and a great replacement to popcorn and crisps.

Sure, you could always eat a few carrot sticks. less effort. less time. but seriously, that extra 20 minutes or so of roasting brings out so many flavours–There’s really no need to eat boring, dull carrot sticks again.

Butternut Squash

Squash is everywhere right now. A brilliant source of fibre, vitamins and macronutrients. Tasty and delicious, yet an absolute nightmare to peel. If you’ve ever tried to peel a butternut squash, you will feel my pain. In fact, many people are completely put off cooking with them due to their impenetrable skin. Which is why there is such a market for pre-cut butternut squash,

Build-a-Bowl 👍👍 This is such a great versatile recipe from week 4 lunch in the #28dayjumpstart. For mine I used tempeh for both the protein and carb, and my veggies were butternut squash, asparagus and cauliflower. I roasted all of those together with a little olive oil, garlic powder, salt and pepper. Once they were finished cooking (about 20 mins at 400*F) I added them to a bed of baby spinach and topped with some feta cheese. It was so tasty and savory! 💕🍠🍃 I know my posts have been a little short lately, I've been sick this week, away for work and figuring out some of the final details of my wedding which is less than 3 weeks away (😱), so my life is a little crazy. however, if you want to save a bit of money the masters of the internet came up with a solution:

  • Poke hole’s in your squash with a fork
  • Cut off the top and the bottom of the squash
  • Microwave for 3-4 minutes
  • Let it cool
  • Peel back the skin–It’s easier than peeling a banana

Pumpkin cheesecake

Every Autumn there’s a “brand new” pumpkin flavoured item on the market. Pumpkin latte’s, pumpkin pie’s, pumpkin soups. Especially in October, I start to lose sight of what the word pumpkin even is as I hear/see it so much.

There was one Pumpkin recipe that stood out to me. Being a MASSIVE cheesecake lover, how could I resist a pumpkin cheesecake. Cheesecakes aren’t normally healthy, I know, however with a few tweaks it doesn’t have to be so bad…

It’s not all doom and gloom

Autumn doesn’t have to be filled with Halloween trick or treat sweets and comfort foods. I know it’s a pretty gloomy season, what with all the ghosts and ghouls around and it’s understandable you want to hibernate in an adult cave, who am I to say that’s wrong–because it totally isn’t!
